Another fun and tasty lunch recipe for you today. This Orange, Edamame & Avocado Noodle Salad has been fuelling me through the last of my university work and revision this week. I can’t wait to be done with exams in two weeks’ time, though I’m not exactly free after that as I’ve got a dissertation to write…
But let’s take one step at a time for now, with lunch being our first priority.
I’m sure most of my readers know the beauty of smashed avocado on toast with just a little salt and pepper and lemon. It’s the bright citrus that really elevates the creamy avocado to a whole new level.
So I’ve taken that little principle here with oranges, which are even better here as they’re tangy AND sweet.
Edamame are good for a protein boost, and noodles, well noodles are always fun to eat and I need all the fun I can get in my life when I’m revising. I finished it off with an Asian-esque dressing and herby garnish.
Slurp away!
- 2 Bundles/6oz/125 g Noodles (I used Wholewheat Udon)
- 1 C Shelled edamame
- 1 tsp Toasted sesame oil
- 2 Oranges, segmented
- 1 Avocado, diced
- 2 Green onions, sliced thinly
- Fresh Coriander
- 1/4 C Fresh orange juice (reserved from the segmenting the oranges)
- 1 Tbsp Tamari
- 1 Tbsp Coconut nectar/ Maple syrup
- 1/2 Tbsp Brown rice vinegar
- 1/2 " Fresh ginger, minced
- Pinch of chili flakes (optional)
- Boil a pan of water and cook noodles according to package directions.
- In the last few minutes of cooking time, add the edamame and cook until tender.
- Drain and rinse noodles and edamame in cool water. Transfer to a large bowl and toss with the sesame oil so they don't stick together.
- While the noodles are cooking, segment the oranges. Do this over a bowl to catch all the juice.
- Whisk together all the dressing ingredients, add to the noodles and edamame and mix well.
- If possible, leave this to sit for an hour in the fridge to allow the noodles to absorb the flavours.
- Transfer the noodles to a platter/serving dish and top with the oranges, avocado, sliced green onion and fresh coriander.
- Segmenting oranges isn't easy, especially not the first time, so don't be disheartened and keep practising!

Haha, I think I’m guilty of sometimes making my meals more complex than they need to be so I can procrastinate from revision whilst making then XD
This looks really interesting! Instinctively, I’d veer away from an avocado-orange pairing as a main dish, but scrutinising the recipe more closely, I reckon this is something I’d probably really like. I LOVE savoury-sweet combinations after all, and do such bizarre pairings with food myself that I should know better than to judge ANY flavour pairing because I’ve tried it:D
Only problem is the soybeans, only place I know does them is a big Tescos too far away to walk… Might try this once I go back up to Edinburgh for the sum mer though, my mum always has about 3 packs in the freezer. (And now that I think about it, she makes a soybean dish in which one of the principal ingredients is orange juice…)

I think everything BUT revision is appealing right now! I love the sweet and savoury thing too. Bummer about the lack of edamame near you. I’m fortunate enough to have a Waitrose nd a great health food store 5 minutes down the road so I don’t usually have any problem finding ingredients.

Love this salad! Looks like spring time and I need that up here in northern Canada where the middle of May still looks like winter begrudging its end!! I have a bunch of cilantro in the fridge and a bag of oranges so I think this salad is just begging to be made Canadian style, eh? Lol. I’ve just made a quinoa salad with orange and edamame - good minds think alike 😉 This noodle version sounds fantastic and I like that you used whole orange segments (I only used juice in my quinoa). Perfect study fuel!

I remember cooking a lot when I had revision to do! And even cleaning didn’t seem so bad either… The salad looks fantastic although I’ve never heard of coconut nectar before - will have to do some research.

haha yes! My apartment has never been so clean!
Coconut nectar is just an alternative sweetener. It tastes like honey to me so is a great vegan alternative. You could use your favourite liquid sweetener here though.

Yup, I’m studying music in Brighton. I’m lucky enough to live very close to the town centre - this city is a haven for vegans:D They sell edemame at Waitrose? I’ve got one 5 mins down the road also - actually for that matter there’s the Taj down the road as well, they’re bound to have them if not! Why didn’t I think of this before?!? I’m a doughnut.

Yum. This sounds fantastic. I am on a soba/ edamame kick right now (though the latter are fiendishly difficult to get hold of), so will definitely try this out, probably with a peanut based sauce. Good luck with the revision and the exams. Maybe some steamed broccoli would be nice with this as well….

That’s frustrating. Both my local Waitrose and health food shop sell edamame.
I was thinking of doing a peanut sauce with this but had something else peanutty planned for the following day. It would definitely be good with all the flavours here. Thanks for the good luck wishes!

Just wanted to report that when my son saw your first photo of this dish on our big computer screen from across the room, he said very emphatically, “I want to eat THAT!” So I knew I had to make it immediately! And when my daughter read the print-out (sans photo) in the car, she said “This sounds so good — let’s make this!” So I clearly have kids with great taste in food! I do think vegetarian kids eat a variety of things that a lot of other people, both kids and adults, don’t. For example, the kids did great last year in Japan, eating all sorts of unusual and novel (even to us) plant-based foods. And they can assemble a healthy meal from a salad bar if there are no suitable entrees available. Not that they don’t have their picky moments, but I’m pretty happy with where they are, food-wise!

They sound like great eaters. I certainly wasn’t growing up. It’s not as if we weren’t fed well (albeit not vegetarian…) I just wasn’t having any of it!
