How is it December already?! These past couple of months have flown by and Christmas seems to have snuck up on me.
Christmas is definitely my favourite holiday. I love the excitement around the whole period, the decorations, the celebrations, the family time - and of course the food!

These simple vegan and gluten-free shortbread are light and buttery with a crumbly melt-in-the-mouth texture that’s simply irresistible.

The idea for a holiday virtual cookie swap is brilliant! And these look awesome - the shortbread alone sounds delicious, but with the chocolate coating they must be amazing!

I used to love shortbread too, but haven’t eaten it in years. I’m really excited to try a healthy, vegan version. Where do you buy your potato starch?
I’m obsessed with chocolate and cranberries together too! I love the pop of colour - gets me feeling festive!
I buy potato starch (and most of my baking stuff, nuts/seeds, beans, grains) from Goodness Direct.

I can’t believe it’s the end of the year already, where is the time going?? I sound like an old lady moaning about this all the time but I honestly hate how time is slipping by so fast.

These are so pretty Emma! And oh my gosh we are the same wavelength, as far as cranberries and chocolate go, I just finished photographing a recipe featuring those 2 ingredients today, but with fresh cranberries and a totally different recipe of course, haha!
