Kiwi & Mint Smoothie

Happy Monday! Hope those of you celebrating had a good Easter weekend.

Who overdid it on the chocolate yesterday?! Not to worry, this Kiwi & Mint Smoothie is just the thing to perk you up and leave you feeling refreshed and ready to face the working week (at least it’s another short one).

Fresh herbs not only bring great flavour, but some powerful nutrition too. I don’t reserve them for garnishes but add them in generous quantities to most of my meals, including smoothies! Mint is an obvious choice for a refreshing pick-me-up but I love basil, parsley and coriander (cilantro) as well.

Sliced Kiwi

Green food and drinks always make me feel good so I added a couple more green goodies to the mix- kiwis and a handful of spinach. I tend to overlook kiwis, probably because they don’t look like much from the outside, but I’m very glad I spotted them at the market recently and thought to throw them in the blender.

Kiwi & Mint Smoothie

Yield: 1 Serving

Kiwi & Mint Smoothie

Ingredients

  • 2 ripe kiwis, flesh scooped out
  • 1 large frozen banana
  • 1/2 cup coconut water OR pure water
  • Handful of fresh mint leaves
  • Squeeze of lemon OR lime
  • Handful of spinach
  • Ice, if desired

Instructions

  1. Add all ingredients to a high-powered blender and blend until smooth.
  2. Add more coconut water/water to reach your desired consistency and ice if you like a frosty smoothie.

    Oh, such a pretty green Emma! I just did a Kiwi smoothie the other day too, will be posting it this week…totally different recipe, but it has kiwis in it. I LOVE kiwis, it makes things taste like candy because they are so sweet and my daughter just gobbles them up :)

    Looks divine! I just discovered spinach and kiwi in smoothies, but I haven’t tried mint yet. Since I didn’t indulge at Easter, I might just make mint choc with a little cacao 😉

      Oooh, definitely make a mint choc smoothie! I love mint and chocolate together. I find you need quite a lot of fresh mint to get the flavour to come through the cacao though.
      Mint and berries is also a tasty combo for a smoothie.

    Kiwis almost never find their way into my kitchen, simply because I’m not crazy about the texture. Blending them up would certainly take care of that problem! The mint addition is inspired, and sounds so perfectly refreshing. This formula will come in handy when the weather warms up.

    I have to confess that kiwi fruit and I are not good friends - entirely my fault as I ate way too many for a while as an 8-year-old and have never recovered! Moderation took a while to come to me 😛 Other than that, though, I love the sound of this with the mint and lemon / lime.

    What a stunning combination. I love mint and I love kiwi, but I have never had them in a smoothie together. I would love to give this a try! I’ve been freezing my diced ripe bananas on a weekly basis, they are better than ice!

      That’s exactly what I do. I like frosty smoothies and bananas make smoothies both frosty and sweet!

    Kiwi’s are one of my favourite fruits, I eat them almost every day but I hardly ever put them in a smoothie. Your recipe sounds super refreshing and delicious.
