Apple & Raisin Oaty Breakfast Cookies

I’m back, as promised, with a recipe!

Apple & Raisin Oaty Breakfast Cookies

I don’t talk much about breakfast around these parts. A little odd considering I’m a breakfast devotee. I understand that people are busy in the mornings and don’t have a lot of time to put something on the table, let alone eat, but for me breakfast is like lunch and dinner in that I don’t like to have the same thing day in, day out, even if it is easier to do so.

All the same, it tends to be variations on a theme- porridge, smoothies, muffins…pancakes, etc.

These “breakfast cookies” were borne out of my need for variety. They’re made from typical breakfast ingredients- all wholesome, sustaining, good-for-you things, just in a different form to the norm. I mean, who wouldn’t want to eat cookies for breakfast?!

Apple & Raisin Oaty Breakfast Cookies

I’ve seen quite a few recipes for breakfast cookies around but none of them were what I was looking for- either filled with sugar and definitely not something I’d want to start my day with, or just a bit too virtuous with no added sweetness or fat. My requirements were that they had to be healthy, satisfying AND tasty.

Apple & Raisin Oaty Breakfast Cookies

And so I set out on my mission…The batter looked and tasted good and fortunately the end result didn’t disappoint. After a 30-minute stint in the oven I was greeted with a tray of thick, chewy cookies, just sweet enough and with plenty of goodness to see me through a morning. These are ideal for days when my good intentions fall through and I find myself trying to choke down something whilst getting dressed and packing my bag…I can just grab a couple and run for the bus!

  • 1/3 C Almond Butter
  • 3 Tbsp Maple Syrup
  • 1 tsp Vanilla Extract
  • 2 C Rolled Oats (+ more to decorate)
  • 1/2 tsp Cinnamon

  • 1/2 C Almond Meal (Scant 1C almonds ground in a food processor or spice grinder until a fine meal)
  • 2/3 C Raisins (OR substitute other dried fruit/nuts)

Instructions

  1. Preheat oven to 180C/350F. Line a baking sheet with parchment paper.

  3. Add wet to dry and stir well so everything is coated.
  4. Using a cookie scoop or 1/4 C measuring cup, scoop batter onto prepared baking sheet. Flatten slightly with moistened fingers and sprinkle with dry oats to decorate.

Can’t wait to make these Emma! They look so tasty! I am always looking for breakfasts that I can take with me to lectures and these are perfect :)

Hi Emma, I am a breakfast person (I never skip it), but I’m still trying to get rid of my ‘two sandwiches with chocolate sprinkles’ routine (because I get hungry too soon again and because I want to lessen my gluten intake). I haven’t found the answer yet, though! I need help…

    • coconutandberries says

      December 4, 2013 at 10:43 pm

Haha, 2 sandwiches with chocolate sprinkles?!
These cookies are really substantial and kept me going all morning, maybe they’ll work for you?!

        December 5, 2013 at 6:36 am

Yeah, it’s a Dutch thing… A real staple too. I’ll definitely try these, probably with some walnuts or pecans thrown in.

          December 5, 2013 at 10:40 am

Yes nuts would be great in these!

What’s wrong with seedy bread, toasted and sandwiched around a banana?

      • vegainvianen says

        December 5, 2013 at 1:22 pm

Nothing Paul, I’m just not a big fan and searching for alternatives that do speak to me :)

My kind of food! I’d probably add a slather of almond butter 😉

As much as I love porridge I have to admit that cookies are more fun 😉

It seems sooo delicious!!!! I cannot wait to try that recipe but, well…
I am really sorry to bother you with this kind of question but,
what does “C” an “t” means ? Is that “C” for cup and “t” for tbs or tsp??
I thank you in advance for your help and wish you a nice say. :)

    Astrid

    • coconutandberries says

      December 5, 2013 at 2:43 pm

Sorry for the confusion Astrid. C stands for “cup” (240ml), t is for “teaspoon” and T is for “Tablespoon”. Hope that’s clear. Please let me know if there’s anything else I can help you with! Hope you enjoy the cookies :)

I love this! I agree, sometimes “breakfast” cookies are more cookie than anything, filled with sugar. Other times they’re a little too healthy (and I totally believe there is such a thing 😉 ) but these seem like the perfect middle! I would love to try these. They’re perfect fuel for long active days, and perfect for traveling. Maybe I’ll make some up for our plane ride back home over the holidays! Oh, and I’m sure my husband will thank you :)

    • coconutandberries says

      December 5, 2013 at 4:52 pm

Hehe. Glad you know where I’m coming from! A reader just made them and added choc chips- maybe your husband would like them like that 😉

I was just wondering if the apple puree means applesauce or could you just blend up a couple apples raw? Thanks.. I am looking forward to trying this.

    • coconutandberries says

      December 5, 2013 at 4:52 pm

Yes, applesauce! Sorry, I’m in England and we call apple purée what elsewhere seems to be called apple sauce. Let me know how you like them :)

These look delicious and a good way to change up my breakfasts (I don’t like eating the same thing every day, but often do because I’m constantly late in the morning). Thanks for sharing!

I definitely am a breakfast person, but it just feels so good to start the day with a green smoothie that I hardly vary anymore. Solution: eat breakfast for dinner too! Next to soups and such I regularly like to have chia or oat porridge for dinner. These cookies look good! I would happily crumble them upon my morning green smoothie :)

    • coconutandberries says

      December 9, 2013 at 11:11 pm

Hehe yes I have done that on occasion, but as much as I like sweet things my balance feels a little messed up if I don’t have a savoury dinner.
Cookie topped raw smoothie sounds like a fab idea!

I am a breakfast person and it’s the most important meal of the day! I like to be full in the morning and snack throughout the day! I like to eat different things everyday 😉 Your apple & raisin “oaty (like that name!)” breakfast cookies look delicious - apple puree is a perfect “egg replacer” alternative! Pure yumminess!

    • coconutandberries says

      December 10, 2013 at 8:46 pm

We don’t have “oatmeal” cookies here so I thought “oaty” would be better :)
      Yay for another breakfast fan!

Finally, a healthy and delicious breakfast cooki! :) Do you think I could make a big batch of these and freeze them, and then just defrost one or two the night before a busy day? Or do you think thy wouldn’t freeze/thaw well?

    • coconutandberries says

      January 2, 2014 at 9:50 am

Definitely! That’s exactly what I do 😀 Hope you enjoy them. Let me know!

These look great! I don’t have a food processor/grinder though, so I was wondering about the almond meal. What could I use instead to replace it? Would flour work?

    • Coconut and Berries says

      May 29, 2014 at 3:08 pm

Can you buy almond flour where you are? (Called ground almonds sometimes). That’s just blanched almonds ground up. That would be the best option as the nuts add moisture which you don’t get with other flours. Hope you try them!

Breakfast cookies are a really good thing to add to your breakfast repertoire. I get sick of smoothies in the winter.
