Lentil, Cashew, Quinoa Stuffed Peppers

Lentil, Cashew, Quinoa Stuffed Peppers

Lentils, cashews, quinoa…kale! Does it get more vegan than that? Well, who cares about the stereotypes, all these nutritious foods are some of my favourites.

I’m using them together in these scrummy stuffed peppers.

Lentil, Cashew, Quinoa Stuffed Peppers

You won’t find the recipe on Coconut and Berries  though as I’m guest-posting on The Sweet Life today. Sarah is rather occupied at the moment as she’s just brought another babe into the world, little Nash, brother to the gorgeous Eden. I was more than happy to help out my blogger pal.

Please head on over to The Sweet Life for the recipe and have a good browse through Sarah’s delicious and decadent recipes while you’re there.

This recipe looks so great to me, especially as it resembles one of my favorite dishes from when I was vegetarian. I didn’t quite know how to bring it forward into my vegan life, but it looks like you’ve done all the work for me! I’m very grateful! Printed, and will be making it soon.

It’s been ages since I made stuffed peppers! These look fantastic, and full of texture.

I hadn’t had them since vegetarian days. These lived up to my memory of them though :)

Thanks Elaine. I forgot how much I like stuffed peppers. Roasting them makes the peppers so beautifully sweet.

Ha! Oh food stereotypes. But who cares when they mean eating good, healthy foods? Not I. These look amazing, off to check out the recipe!

These look so beautiful ♥ Years ago, stuffed peppers was one of the only veggie options available in restaurants, and I started to get a bit tired of them. I haven’t eaten them in years though and, after reading your post, I’m actually craving them! I love your modern twist on this classic veggie dish x

I know what you mean. It was one of those uninspired dishes on menus which I’d always sigh at… but I hadn’t had them for ages either and wanted to veganize them :)
