How is it December already?! These past couple of months have flown by and Christmas seems to have snuck up on me.
Christmas is definitely my favourite holiday. I love the excitement around the whole period, the decorations, the celebrations, the family time - and of course the food!
Kristy of Keepin’ It Kind is hosting her annual Cookie Swap Party again this year and today I’m over there sharing my recipe for Chocolate Dipped Lemon & Cranberry Shortbread.
These simple vegan and gluten-free shortbread are light and buttery with a crumbly melt-in-the-mouth texture that’s simply irresistible.

I used to love shortbread too, but haven’t eaten it in years. I’m really excited to try a healthy, vegan version. Where do you buy your potato starch?

I’m obsessed with chocolate and cranberries together too! I love the pop of colour - gets me feeling festive!
I buy potato starch (and most of my baking stuff, nuts/seeds, beans, grains) from Goodness Direct.

It’s so lovely having children around at Christmas. We go to my brother’s for Christmas day and I love celebrating with my little nephews and niece!

These are so pretty Emma! And oh my gosh we are the same wavelength, as far as cranberries and chocolate go, I just finished photographing a recipe featuring those 2 ingredients today, but with fresh cranberries and a totally different recipe of course, haha!
