I’m back, as promised, with a recipe!
I don’t talk much about breakfast around these parts. A little odd considering I’m a breakfast devotee. I understand that people are busy in the mornings and don’t have a lot of time to put something on the table, let alone eat, but for me breakfast is like lunch and dinner in that I don’t like to have the same thing day in, day out, even if it is easier to do so.
All the same, it tends to be variations on a theme- porridge, smoothies, muffins…pancakes, etc.
These “breakfast cookies” were borne out of my need for variety. They’re made from typical breakfast ingredients- all wholesome, sustaining, good-for-you things, just in a different form to the norm. I mean, who wouldn’t want to eat cookies for breakfast?!
I’ve seen quite a few recipes for breakfast cookies around but none of them were what I was looking for- either filled with sugar and definitely not something I’d want to start my day with, or just a bit too virtuous with no added sweetness or fat. My requirements were that they had to be healthy, satisfying AND tasty.
And so I set out on my mission…The batter looked and tasted good and fortunately the end result didn’t disappoint. After a 30-minute stint in the oven I was greeted with a tray of thick, chewy cookies, just sweet enough and with plenty of goodness to see me through a morning. These are ideal for days when my good intentions fall through and I find myself trying to choke down something whilst getting dressed and packing my bag…I can just grab a couple and run for the bus!
Ingredients
- Apple & Raisin Oaty Breakfast Cookies:
- 1 C Unsweetened Apple Purée
- 1/3 C Almond Butter
- 3 Tbsp Maple Syrup
- 1 tsp Vanilla Extract
- 2 C Rolled Oats (+ more to decorate)
- 1/2 tsp Cinnamon
- Large pinch of salt (Omit if your almond butter is salted)
- 1/2 C Almond Meal (Scant 1C almonds ground in a food processor or spice grinder until a fine meal)
- 2/3 C Raisins (OR substitute other dried fruit/nuts)
Instructions
- Preheat oven to 180C/350F. Line a baking sheet with parchment paper.
- In a small bowl, stir apple purée, almond butter, maple syrup and vanilla extract until smooth. In a large bowl, combine oats, cinnamon, salt, almond meal and raisins.
- Add wet to dry and stir well so everything is coated.
- Using a cookie scoop or 1/4 C measuring cup, scoop batter onto prepared baking sheet. Flatten slightly with moistened fingers and sprinkle with dry oats to decorate.
- Bake for 25-30 minutes, or until lightly browned. Allow to cool before removing from baking sheet

Yeah, it’s a Dutch thing… A real staple too. I’ll definitely try these, probably with some walnuts or pecans thrown in.

what does “C” an “t” means ? Is that “C” for cup and “t” for tbs or tsp??

I love this! I agree, sometimes “breakfast” cookies are more cookie than anything, filled with sugar. Other times they’re a little too healthy (and I totally believe there is such a thing 😉 ) but these seem like the perfect middle! I would love to try these. They’re perfect fuel for long active days, and perfect for traveling. Maybe I’ll make some up for our plane ride back home over the holidays! Oh, and I’m sure my husband will thank you

Yes, applesauce! Sorry, I’m in England and we call apple purée what elsewhere seems to be called apple sauce. Let me know how you like them

I definitely am a breakfast person, but it just feels so good to start the day with a green smoothie that I hardly vary anymore. Solution: eat breakfast for dinner too! Next to soups and such I regularly like to have chia or oat porridge for dinner. These cookies look good! I would happily crumble them upon my morning green smoothie

Hehe yes I have done that on occasion, but as much as I like sweet things my balance feels a little messed up if I don’t have a savoury dinner.

I like to eat different things everyday 😉 Your apple & raisin “oaty (like that name!)” breakfast cookies look delicious - apple puree is a perfect “egg replacer” alternative! Pure yumminess!

Finally, a healthy and delicious breakfast cooki! Do you think I could make a big batch of these and freeze them, and then just defrost one or two the night before a busy day? Or do you think thy wouldn’t freeze/thaw well?

These look great! I don’t have a food processor/grinder though, so I was wondering about the almond meal. What could I use instead to replace it? Would flour work?

Can you buy almond flour where you are? (Called ground almonds sometimes). That’s just blanched almonds ground up. That would be the best option as the nuts add moisture which you don’t get with other flours. Hope you try them!
